Getting Skinny

Okay, I know this blog is about food but enough is enough! I started off the new year working out and at first is was no fun,but now I'm feeling pretty good. In the spirit of eating I had to find some recipes that still tasted good, filled me up and allowed me to keep my caloric intake to acceptable levels for myself. My beloved bride found a keeper so here it is:

Honey Curry chicken:

Curry glaze:

1/3 cup melted butter
1/2 cup honey
1/4 cup prepared yellow mustard
1T Curry powder

Bake a chicken breast lightly seasoned serve over a bed of Jasmine rice and lightly drizzle the curry glaze over the top and you have yourself a filling 375-400 calorie dish!

I have this same recipe except for there's no butter...and it's still yummy, but even healthier!

1/3 of a cup of butter? That's a lot of stinkin' butter! Judd

I just have to say, although I do think we may try it Christina's way without the butter, keep in mind you are not ingesting the whole 1/3 c. of butter. You are just drizzling this over your chicken and rice. It makes enough to serve 6-8 people generously.

Oh and my other thought on this one was to substitute a little EVOO in for the butter.
